Rice Krispie Cakes had to part of our ‘School Holiday Baking’ series as they are so easy to make and very tasty. We’ve put of our own little twist on the classic recipe to make them a little different. The kids will love making these as they get to stir all the ingredients together and put the mixture in the cases. Ingredients
110g dark chocolate
50g butter
50g golden Syrup
70g rice krispies
25g mini marshmallows
30g glace cherries, chopped
Method
Put the chocolate, butter and golden syrup in a glass bowl and place it over a pan of simmering water until the chocolate is melted and everything is combined (be careful not to let the water touch the bottom of the bowl).
Remove from the heat then gently stir in the rice krispies until they are completely covered in chocolate. Stir in the marshmallows and cherries.
Scoop the mixture into paper cake cases in a cupcake tin and then chill in the fridge for about 1 hour or until the chocolate has set.
You could decorate them with a few extra marshmallows or even melt some white chocolate and drizzle this over! You could make these a little more ‘adult’ by adding a spoonful of coffee to the melting chocolate mixture!
