Out of the two of us, Rosie is definitely the meringue expert. After making a big batch of custard (she’s the custard expert too!) we had lots of extra egg whites hanging around, so Rosie whipped up some of these pretty pink meringue kisses.
If you fancy making some yourself, just use your favourite meringue recipe (or try this one from Good Food). Add some pink food colouring to the mixture (gel colour is best, or just use a little bit if it’s liquid) at the end, and then put the mixture into a piping bag fitted with a star tip. Pipe out little kisses onto a baking sheet lined with parchment, and cook as instructed – taking care not to have the oven too hot so that they don’t brown.
Yummy with strawberries, and very pretty, these are a lovely summer treat!
