Chamomile & Honey Loaf Recipe
Ingredients
Makes one delicious loaf cake
Cake
- 135g Plain Flour
- 60g Wholewheat Flour
- 1 1/2 tsp Bicarbonate of Soda
- 150g Caster Sugar
- 2 Eggs
- 50g Butter
- 95ml Milk
- 1 Teabag of Chamomile Tea
Decoration
- 80g Icing Sugar
- Pinch of Salt
- 20g Honey
- 1 tbsp Milk
Method
1. Empty the contents of the chamomile teabag into a small saucepan. Add the milk and butter and place over a medium heat. Once the butter has melted, reduce to low and gently simmer the mixture for about 5 minutes. Remove from the heat and strain through a sieve, discarding the chamomile flowers. Set aside the infused butter mix to cool.
2. Preheat your oven to 180°C/ 160°C / Gas Mark 4. Grease and line a standard sized loaf tin.
3. Put your flours and bicarbonate of soda in a large bowl. Make a well in the middle and add the eggs, sugar and infused butter mixture. Whisk together to combine, the batter will be fairly thick, don’t worry! Pour it into your prepared loaf tin and bake in the oven for 35 to 45 minutes, or until a cocktail stick inserted into the middle comes out clean.
4. While your cake is in the oven, make the glaze by whisking all of the ingredients together in a small bowl.
5. Once your cake is baked, remove from the oven and allow to cool in the tin slightly for about 10 minutes. Then remove from the tin and spoon over the honey glaze. Leave the cake to cool before serving with a cup of your favourite tea.
