Yesterday was National Burger Day and so in true Bakes style we had to get creative to celebrate. We couldn’t just make ordinary burgers so instead we decided to make burgers out of cake! The buns are vanilla cupcakes chopped in half, the burgers chocolate butter cream, the cheese fondant icing, the ketchup icing sugar and water dyed red, the mayo white chocolate and the lettuce (my favourite bit), is shredded coconut dyed green.
These cakes are really cute and look very impressive. They would be a great project for you and the kids this weekend as part of out ‘School Holiday Baking’ series.
Ingredients (makes 12)
Cakes – ‘Buns’:
150g butter, softened
150g caster sugar
150g self raising flour
3 eggs
1 tsp vanilla essence
1 tbsp sesame seeds
‘Burger’:
100g butter, softened
180g icing sugar
20g cocoa powder
‘Cheese’:
Ready to roll fondant icing
Yellow food colouring
‘Ketchup’:
4tbsp icing sugar
Red food colouring
‘Mayo’
50g white chocolate
‘Lettuce’:
50g shredded coconut
Green food colouring
Method
Pre-heat the oven to 180C/160C fan and place 12 muffin cases in a 12 hole tin. Make the cakes by beating the butter and sugar together before adding the eggs, flour and vanilla. Beat well until smooth and spoon the mixture into the cases. Sprinkle over the sesame seeds and bake for 20-25minutes or until golden brown and a knife inserted comes out clean. Remove form the tin and leave to cool completely.
Meanwhile, prepare the other elements. Make the butter cream by beating the butter, icing sugar and cocoa together until smooth. Place into a piping bag. Once the cakes are cool, remove the cases and cut in half to separate the tops and bottoms. Snip the chocolate icing piping bag about 1.5cm from the tip and pipe a circle of icing around the top edge of the bottom half of the buns. Use any extra icing to fill in the middles.
Make the ‘cheese’ by adding a little yellow colouring to the ready to roll icing and knead well, you may want to wear plastic gloves for this. Once the desired colour is reached, roll the icing out and cut into small squares, just bigger then the cakes. Prepare the ‘ketchup’ by placing the icing sugar in a bowl with a few drops of water, you want a thick paste. Add the red colouring and mix well before placing into a piping bag. Place a square of ‘cheese’ on top of the chocolate and then pipe on the ‘ketchup’.
Make the ‘lettuce’ by placing the coconut in a bowl with half a teaspoon of green colouring and half a teaspoon of water. Mix really well until all the coconut is green. Add a spoonful of ‘lettuce’ to each.
Melt the white chocolate in 30 second blasts in the microwave, stirring well in between. Place into a piping bag and pipe the ‘mayo’ onto the top. Place the top of the buns back on.
