Bonfire night is all about things warming and stodgy and sweet and sticky, and we have the perfect syrupy bake for you – perfect with a bowl of steaming hot custard after bangers and mash!
This is a recipe I have been making for years and is perfect for this time of year. It’s similar to parkin in that it is better after a couple of days but isn’t ginger and doesn’t contain oats… so actually nothing like it 😂 but absolutely delicious all the same!

Sticky Cinnamon Cake
Time: 40 minutes including baking time
Serves: 8 – 12
Ingredients:
225g Golden Syrup
100g Butter
100g Caster Sugar
1 TBSP Mixed Spice
1 TBSP Ground Ginger
1 TBSP Cinnamon
225g Self Raising Flour
200ml milk
2 Eggs
1 TSP Bicarbonate of Soda
50g Granulated Sugar (to line the tin)
Method:
- Preheat the oven to 180℃/ gas mark 4 and grease a deep traybake tin or loaf tin. Grease generously with butter and then shake with granulated sugar. This gives the cake a lovely crunch when its cooked.
- In a pan over a medium heat, melt the syrup, butter and sugar until a thick syrup – do not boil. Remove from the heat and leave to cool slightly before adding the milk and eggs. Beat until smooth and fully incorporated.
- In a separate bowl, sift the flour, spices, and bicarbonate of soda. Pour in the wet ingredients and mix thoroughly until you have a smooth (but slightly runny) batter.
- Tip the mixture into the prepared tin and bake on the middle shelf for 30 minutes or until a skewer comes out clean.
- Allow to cool for 15 minutes and slide a knife around the edge the make sure it comes out clean.
- Serve with lashings of custard or keep in a tin or cling filmed for up to 5 days, it will just keep getting better!
