A Rustic Wedding Cake

We made a wedding cake! This is our first attempt at a wedding cake, so we were pleased our sister choose a rustic looking cake for her wedding last weekend.

It’s Victoria sponge sandwiched with vanilla buttercream and strawberry jam. We then added strawberries, raspberries, redcurrants and blackberries as well as a few roses. A dusting of icing sugar topped it off!

We put it on a log cake stand to complete the rustic look.

It must have tasted ok – there’s none left!

Hi Leah, thank you 🙂 We made three vanilla cakes, with a standard recipe (ie. 2 eggs to 100g sugar, butter and flour + 1 teaspoon vanilla essence – scaled to fit the cake tins). We then wrapped them in clingfilm and left them to set in the fridge, which makes cutting them easier. Each cake was on a thin cake board the same size as the cake, which helps them to stack easily (attach them to the cake board with a bit of buttercream). Then we sliced the cakes in half, brushed sugar syrup onto them, and filled them with buttercream and jam. Then yes we doweled the cakes to stack the others on top, and used extra buttercream to stick on the flowers and fruit. If you need any more info, just let us know! And good luck if you’re making one.

Hi, can you please send more specific quantities for the vanilla sponge cake. I would like to try it for my daughter’s rustic vintage tea reception in June. Much appreciated.

Hi Linda, the quantities depend on how big you cake is going to be! It’s a standard sponge cake, with the ratio 8oz flour, 8oz butter, 8oz sugar and 4 eggs. Good luck!

Heya, my future step mother has asked me to make her a naked wedding cake. I can figure out the quantities, however what size tins did you use? i.e. which was the largest? Then I can work my way down!
Thanks 🙂

The largest cake was 14″ and then down by 2″ every time. We hope your future step-mother enjoys the cake you make her. Good luck!
